Old English Roast Beef Dinner (Chinese Style Cooking Recipe) Ingredients: For The Roast Beef: 900g Beef Joint 6 Cloves Garlic 1½ Onions 1 Tbsp Red Peppercorn 1 Tsp Mustard 2 Tsp Horse Radish 2 Tbsp Soy Sauce 8 Tbsp Gravy Granules 1 Tbsp Coarse Black Pepper For The Beef Gravy: ½ Onion 2 Cloves Garlic 1 Tsp Coarse Black Pepper 2 Tbsp Cherry Jam 100ml Red Wine 6 Tbsp Roast Beef Stock For The Yorkshire Puddings: 1 Tsp Sage ½ Onion 150g Plain Flour 5 Eggs 275ml Milk For The Roast Potatoes: 4 Medium Potatoes 2 Stems Fresh Rosemary 1 Tbsp Lemon Juice 1 Tsp Coarse Black Pepper 3 Cloves Garlic 3 Tbsp Grated Parmesan Cheese 4 Tbsp Olive Oil For The Sausage Meatballs: 350g Sausage Meat 1 Cooking Apple (150g) 180g Streaky Bacon (8 – 10 slices) For The Roast Vegetables: 2 Carrots 200g Broccoli 250g Cauliflower 1 Large Onion 4 Cloves Garlic 1 Tsp Coarse Black Pepper 1 Tbsp Oregano 4 Tbsp Olive Oil 2 Tbsp Lemon Juice For The Sprouts & Crispy Bacon: 200g Brussel Sprouts 200g Walnuts 100g Streaky Bacon 1 Tsp Lemon Juice 1 Tbsp Olive Oil 2 Tbsp Parmesan Cheese ½ Tsp Coarse Black Pepper Method: Roast Beef (Preparation & Cooking) 1. Pre-heat oven to 200 degrees while cutting the onions into wedges 2. Crush the garlic with the skins left on 3. Place the mustard, horseradish, soy sauce & gravy granules into a jug 4. Add in 1400ml of boiling water & gradually stir 5. Heat 2 Tbsp of oil in a roasting pan for 3 minutes 6. Add the red peppercorns, onion & garlic 7. Add the beef & black pepper 8. Place the beef in the oven for 10 minutes to seal 9. Add the gravy mixture to the roasting dish & pace a lid (or cover with foil) 10. Place the beef back into the oven & roast on medium heat (150 degrees) 11. Roast for 1½ to 2 hours until the meat is tender Yorkshire Puddings (Preparation) 1. Chop the onion finely 2. Place the flour, eggs & milk in a mixing bowl 3. Mix until it forms a smooth mixture 4. Then leave to stand for 1 hour Roast Potatoes (Preparation) 1. Cut potatoes into quarters 2. Finely chop the rosemary & garlic 3. Boil potatoes in 1 litre of water for 5 minutes then drain Roasted Mixed Vegetables (Preparation) 1. Cut the carrots 1 inch in length 2. Cut broccoli & cauliflower into bite-size pieces 3. Cut onion into quarters & roughly chop the garlic 4. Place vegetables in a mixing bowl 5. Add onion, garlic, black pepper, oregano, salt, lemon juice & olive oil 6. Mix all ingredients together 7. Place the vegetables into a roasting pan, for when cooking Brussel Sprouts & Crispy Bacon (Preparation) 1. Peel off the outer layers of the sprouts & then cut into halves 2. Toast the walnut in the pan for 2 minutes on medium heat, & leave to cool 3. Fry the bacon for 5 – 8 minutes until golden & crispy, leave to cool Sausage Meatballs (Preparation) 1. Cut the apple into bite-size pieces 2. Blend apple for 1 – 2 minutes using food processor 3. Place the sausage meat into a mixing bowl 4. Add the apple & mix the contents well 5. Divide the mixture into 8 equal size pieces 6. Then roll each piece to form a ball 7. Wrap each meatball with 1 piece of bacon across 8. Press it gently so it’s slightly flat Roast Beef (Remove) Remove the beef from the oven then remove from liquid & allow meat to rest for a while Roast Potatoes (Cooking) 1. Place the potatoes in a roasting pan 2. Add rosemary, garlic, black pepper, parmesan cheese, lemon juice, salt & olive oil 3. Mix all ingredients together 4. Place into the oven & roast for 35 – 40 minutes until golden & crispy (180 degrees) 5. Turn the potatoes regularly during roasting Roasted Mixed Vegetables (Cooking) 1. Place the vegetables in the preheated oven & roast for 20 to 35 minutes (180 degrees) Sausage Meatballs (Cooking) 1. Place the meatballs in a greased roasting dish 2. Place in the oven & cook for 25 – 30 minutes until the meat is cooked (180 degrees) Yorkshire Puddings (Cooking) 1. Pour 1 Tsp of oil into each cell of a roasting pan 2. Place in the oven for 5 minutes until smoking hot 3. Add the onion, sage & salt to the batter & mix well 4. Remove the pan from the oven 5. Immediately pour the batter into each cell 6. Only half fill each cell with batter 7. Return to the oven & cook for 15 to 20 minutes (180 degrees) Brussel Sprouts & Crispy Bacon (Cooking) 1. Boil the Brussel sprouts in 1 litre of water for 5 minutes then drain 2. Place the sprouts in a mixing bowl 3. Crumble in the walnuts & bacon slightly & add to the bowl 4. Add lemon juice, olive oil, black pepper & salt 5. Mix all ingredients together 6. Transfer into a dish with grated parmesan cheese over Beef Gravy (Preparation & Cooking) 1. Finely chop the onion & garlic 2. Heat 2 Tbsp of oil in the pan 3. Add the onion & garlic. Fry on medium heat for 2 minutes until the onion is soft 4. Add the jam, black pepper & fry for a minute 5. Add red wine & simmer for 3 minutes 6. Add the gravy from the beef & a pinch of salt 7. Simmer on medium heat for 2 – 4 minutes
