Sichuan Hot & Spicy (Hot Pot) Prawn/Shrimp Balls - Chinese Style Recipe Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes. Ingredients: 160g Raw Prawns 100g Pak Choi (or another green leaf vegetable) Half Egg White 15ml Cornflour 2 Spring Onions 5g Ginger 10 Dries Red Chillies (or less) 4 Cloves Garlic 10g Sichuan Red Peppercorns 30ml Pi Xian (or spicy) Bean Sauce 1 Tbsp Cooking Wine 1 Tbsp Light Soy Sauce 1 Tsp Sugar 3 Tbsp Peanut Oil Method: 1. Cut prawns into small pieces, and then chop into mash likeness 2. Place in a bowl, add cooking wine, egg white, a pinch of salt and cornflour. Stir clockwise and combine all these ingredients together 3. Cut the white part of the Spring onions into 1 inch in length, then roughly chop the green part 4. Roughly chop the chillies and garlic 5. Thinly slice the ginger and then cut into thin threads 6. Heat 1 Tbsp oil in the wok over low to medium heat 7. Add the white part of the spring onions, garlic, Sichuan peppercorns and ginger, Stir and fry for 2 minutes 8. Add the bean sauce, stir-fry for 2 minutes. Add 600ml of boiling water 9. Take 1 Tsp of the prawn mixture and drop into the wok, cook for a minute or so until it's set and then gently stir 10. Repeat this until all prawn mixture are used 11. Once reaches boiling point, add sugar, soy sauce and then stir. Turn heat to low 12. Boil 1 litre of water in the pan 13. Place Pak Choi in the pan and blanch for 2 minutes, remove and drain 14. Place the Pak Choi on the bottom of a bowl 15. Pour the prawn balls and stock onto the vegetable 16. Heat the peanut oil in the wok until smoking hot 17. Place the chillies and green part of the spring onion in the bowl 18.
