Best Roast Potato Recipe (Xiao's Kitchen) Chinese Style Recipe Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes. Serve this with Xiao’s roast beef, roast vegetables, stuffing balls and Yorkshire pudding. Xiao’s Roast Potatoes Serves 4 Ingredients: 4 Medium Potatoes 2 Stems of Fresh Rosemary 1 Tbsp Lemon Juice 3 Cloves Garlic 1 Tsp Coarse Black Pepper 3 Tbsp Grated Parmesan Cheese 4 Tbsp Olive Oil Salt to Your Taste Methods: 1. Preheat oven to 180 degrees 2. Cut potatoes into quarters 3. Finely chop rosemary and garlic. 4. Boil potatoes in 1 litre of water for 5 minutes then drain. 5. Place potatoes into a roasting pan. 6. Add rosemary, garlic, black pepper, parmesan cheese, lemon juice, salt and olive oil. 7. Mix all ingredients together. 8. Place into the oven and roast for 35 – 40 minutes until golden and crispy. 9. Turning the potatoes regularly during roasting. 10. Transfer onto a dish and serve with Xiao’s roast beef or whatever meat you desire.
