Chicken & Mushroom Noodle Soup - Chinese Style Recipe Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes. Ingredients: 1 chicken breast chopped 900ml chicken or vegetable stock 10g ginger finely chopped 2 cloves garlic finely chopped 50g rice noodles 2 Tbsp canned sweetcorn 3 mushrooms thinly sliced 2 spring onions thinly shredded 2 Tsp light soy sauce Handful of basil leaves roughly chopped Method: 1. Pour the chicken stock into a pan 2. Add the chicken, ginger and garlic, bring to the boil 3. Reduce heat to low, cover the pan and cook for 20 minutes until the chicken is tender 4. Remove chicken onto a board and pull into threads using 2 forks 5. Return the chicken to the pan, add the noodle, sweetcorn, mushrooms, half of the spring onions and soy sauce, bring back to the boil 6. Turn heat to medium, simmer for 3-4 minutes until noodles are tender 7.
