Chicken & Sweetcorn Stir Fry (Chinese Style Cooking Recipe) Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes. Ingredients: 200g Chicken Breast 100g Sweetcorn 100g Red Pepper 2 Spring Onions 5g Ginger 1Tsp Light Soy Sauce 1 Tsp Cooking Wine 20g Cornflour Salt to Taste Method: 1. Finely chop the spring onions and ginger 2. Slice the red pepper, then chop into 1cm cubes 3. Cut chicken into strips and then into cubes at the same size of the pepper cubes 4. Place chicken in a mixing bowl, add a pinch of salt, cornflour, cooking wine, about a teaspoon of oil. Mix all ingredients together and leave to marinate for 5 minutes 5. Heat a Tbsp of oil in the wok till smoking hot 6. Place marinated chicken in the wok, stir and fry 5 minutes, remove onto a dish 7. Heat about a Tsp of oil in the wok 8. Place spring onion and ginger into the wok, fry for few seconds 9. Add the sweetcorn and stir-fry for a minute 10. Add the chicken and stir-fry for 2 minutes 11. Add soy sauce and stir 12. Add the red pepper, salt and stir 13.
