Chinese Crispy Fried Chicken (Chinese Style Cooking Recipe) Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes. Ingredients: 5 – 7 Chicken Drumsticks 2 Eggs 100g Breadcrumbs 80g Cornflour 1 Tbsp Cooking Wine 1 Tsp Ground Black Pepper 1 Tsp Ground Cumin 1 Tsp Salt Method: 1. Remove the knuckles from each drumstick 2. Make 2 slashes each side 3. Break the eggs in a bowl and whisk 4. Boil a litre of water in a pan 5. Place drumsticks into the boiling water and boil for 15 minutes. Remove and drain 6. Place the drumsticks in a bowl, add the black pepper, cumin, cooking wine and salt. Mix well and leave to marinate half of an hour to an hour 7. Roll each drumstick in the cornflour, ensure an even coverage 8. Dip the floured drumstick into egg – ensure an even coverage, and then onto the breadcrumbs and roll – ensure an even coverage 9. Repeat this with the rest of the drumsticks 10. Heat 1-litre oil in the wok 11. Place drumsticks into the hot oil, deep fry for 10 to 15 minutes on medium heat until golden 12.
