Chinese Curry Rice Recipe (Asian, Chinese Curry Recipe) Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes. Ingredients: 100g pre-cooked cold rice 1 onion 0.5cm ginger 2 clove garlic 2 tomatoes Small bunch (20g) coriander 1 spring onion 2 Tbsp curry powder 1 Tsp ground coriander Half lime Salt to your taste Method: 1. Finely chop the onion, ginger and garlic. 2. Finely chop the coriander and spring onion. 3. Cut tomatoes into small cubes. 4. Place tomato in a bowl and mix with half of both spring onion and coriander also, include a small pinch of salt. 5. Heat 2 Tbsp oil in a wok. 6. Add ginger, garlic, onion, ground coriander, curry powder and fry for 2 minutes. 7. Add rice to the wok and stir-fry for 2 minutes. 8. Squeeze lime juice in, add salt and stir-fry for further 5 minutes until the rice becomes fluffy and heated through. 9. Stir in spring onion and coriander. 10.Transfer onto a dish, top with the tomato mixture and serve.
