Chinese Potato & Onion Ring Recipe (Chinese Vegetarian Recipe) Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes. Ingredients: 2 medium size potatoes 2 onions 1 carrot 1 green chilli pepper 1 – 2 ready to eat plain sausage 2 Tbsp cornflour 1 Tsp coarse black pepper Salt to your taste Method: 1. Peel and cut potatoes into small cubes. 2. Place into a saucepan with 400ml water. 3. Boil potatoes for 20 minutes. 4. Then drain and mash. 5. Cut each end off the onions and reserve. 6. Then cut the rest of the onions into rings (not too big). 7. Dust the onion rings with cornflour. 8. Cut the reserved onions, carrot & green chilli pepper. 9. Cut the plain ready to eat sausages into very small cubes. 10. Add the potato mash, add salt, pepper and mix well. (Add 1 Tbsp of cornflour if the mush is too runny) 11. Heat 2 Tbsp oil in frying pan over medium heat. 12. Place onion ring into the pan. 13. Take 1.5 Tbsp of mash mixture and place inside of the ring. 14. Fry on medium-low heat both side for 5 minutes until golden. Do this in batches. 15.
