Cumin Pork & Potato Stir Fry (Xin Jiang Potatoes) Chinese Style Recipe) Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and learn new Asian/Chinese recipes. Ingredients: 100g Minced Pork 3 Medium Potatoes ½ Green Pepper ½ Red Pepper 10g Ginger 3 Cloves Garlic 3 Spring Onions 2 Tbsp Light Soy Sauce 1 Tbsp Cumin Seeds 1 Tbsp Cornflour 1 Tbsp Sesame Oil Salt to Taste Method: 1. Cut potatoes into bite-size cubes 2. Cut the peppers into small cubes 3. Finely chop the ginger, garlic and spring onions 4. Place the minced pork in a mixing bowl, add a pinch of salt, sesame oil, soy sauce and cornflour, then mix well 5. Place the potatoes in a saucepan with 1 litre of water, boil for 20 minutes until cooked 6. Remove the potatoes from saucepan and drain 7. Heat 2 Tbsp oil in the wok, fry potatoes for 10 minutes on medium-low heat until golden. Remove from the wok but leave the oil in the wok 8. Add the minced pork in the wok and fry for 5 minutes 9. Add the cumin, peppers and salt, fry for 5 minutes 10. Add the potatoes, garlic, ginger and spring onions, fry for 3 minutes 11.
