Peking Spicy Courgette Stir Fry (Chinese Vegetarian Recipe) Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes. Ingredients: 500g Courgette 1 Red Chilli Pepper (or Sweet Pepper) 10g Ginger 4 Cloves Garlic 1 Spring Onion 2Tbsp Sweet Bean Sauce 1 Tbsp Sesame Oil Salt To Taste Method: 1. Cut the courgette into halves, remove the seeds and soft flesh from the middle 2. Slice courgette into thin slices 3. Thinly slice the red chilli 4. Finely chop garlic, ginger and spring onion 5. Boil 1 litre of water in a pan, blanch courgette for 30 seconds, remove and drain 6. Heat 1 Tbsp of oil in a wok 7. Add ginger, garlic, spring onion and chilli, fry for a few seconds 8. Add the sweet bean sauce, 30ml of water, stir fry for few seconds 9.
