Spicy Mussels With Ginger (Chinese Style Cooking Recipe) Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes. Ingredients: 600g Mussels 10g Ginger 5 Cloves Garlic 3 Spring Onions ½ Green pepper ½ Red Pepper 1 Tbsp Spicy Bean Sauce 1 Tbsp Shaoxing Rice Wine 1 Tbsp Sugar ½ Tsp Ground White Pepper 1 Tbsp Light Soy Sauce 1 Tsp of Cornflour Salt To Taste Method: 1. Soak the mussels in salty water for 30 minutes to an hour, then clean, rinse and drain 2. Thinly slice the ginger and garlic 3. Roughly chop the spring onions 4. Cut the red & green peppers into bite-size pieces 5. Combine the cornflour with 25ml of water in a bowl 6. Heat 2 Tbsp oil in the wok 7. Add the ginger, garlic, spring onions and spicy bean sauce into the wok, stir-fry for about 10 seconds 8. Add the mussels, pour the Shaoxing rice wine all over, cover the wok and cook for 2 minutes 9.
