Spicy Sichuan Pork Recipe (Chinese Spicy Cooking Channel) Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes. Ingredients: 600g belly pork (or pork fillet) 2 Tbsp green peppercorn 2 whole star anise 4 cloves 1 cinnamon stick 2 spring onions 3 red chilli peppers 2 Tbsp soy sauce 8 cloves garlic 1cm ginger root Small bunch fresh coriander 2 Tbsp sugar 1 Tbsp sesame oil 20ml chicken stock Salt to taste Method: 1. Place pork in a pan, add star anise, cinnamon stick, cloves, half of the soy sauce and 1.5 litres of water. 2. Boil on medium heat for 1 – 1.5 hours until pork is tender. 3. Meanwhile, slice the garlic, ginger and chilli peppers. 4. Slice the spring onions and roughly chop the coriander. 5. Once the pork is cooked, remove from the boiling water and place on a dish to rest. 6. Cut the belly pork into bite-sized chunks (or slices if used pork fillet). 7. Heat 2 tablespoons of oil in a wok. 8. Add the green peppercorn, garlic, ginger, chilli, pork, sugar and stir-fry for 2 -4 minutes. 9. Add the remaining soy sauce, salt, stock, spring onion and coriander, drizzle with sesame oil and stir. 10.Transfer to a dish and serve.
