Sweetcorn Egg Fried Rice Recipe (Chinese Vegetarian Recipe) Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes. Ingredients: 250g Pre Cooked Rice 30g Sweetcorn 30g Peas 50g Cucumber 50g Carrot 50g Onion 1 Egg 1 Spring Onion 1 Tsp Ground White Pepper 1 Tsp Sesame Oil Salt to Taste Method: 1. Finely chop the spring onion and onion 2. Cut cucumber into small cubes 3. Cut carrot into small cubes 4. Break the egg into a bowl and beat till light 5. Heat 1 Tsp of oil in the wok 6. Place spring onion into the wok and fry for few seconds 7. Add the egg to the wok, stir fry till cooked, remove onto a dish for later 8. Heat 2 Tbsp of oil in the wok till smoking hot 9. Add the onion and fry for a minute 10. Add sweetcorn, peas, cucumber and carrot cubes. Stir-fry for 3 minutes 11. Add the rice and egg, stir fry for about 5 minutes till cooked through 12. Add salt and white pepper, stir-fry for a minute 13. Add sesame oil and stir 14.
