Chinese Egg Fried Rice Recipe (Chinese Style Cooking Recipe) Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes. When cooking this dish, you should always use pre-cooked, cold rice. Ingredients: 1 bowl of pre-cooked rice (half of a mug of rice before it’s cooked) 2 spring onions 4 slices of ginger 2 Tbsp soy sauce 2 eggs Salt to taste Methods: 1. Finely chop the ginger and spring onions. 2. Place both ingredients in a dish for later. 3. Break the 2 eggs into a bowl. 4. Heat 2 tablespoons of oil. 5. Beat the eggs and pour into the wok. 6. Continuously stir till scrambled. 7. Add the spring onions and ginger and fry for few seconds. 8. Add the rice and stir-fry for a minute. 9. Add salt to taste, soy sauce and Stir-fry for a further 5 minutes till the rice becomes fluffy. 10.Transfer the rice to a dish and serve.
