Mongolian Crispy Lamb Recipe (Chinese Style Cooking Recipe) Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes. A very popular dish often used for entertaining guests in Mongolia. Ingredients: 850g Lamb Chops 5 Cloves Garlic 5cm Ginger 2 Spring Onions 2 Tsp Cumin Seeds 1 Tbsp Ground White Pepper 4 Tbsp Soy Sauce 6 Dried Red Chillies Salt to Taste Method: 1. Slice the garlic & ginger 2. Roughly chop the spring onions 3. Place the lamb chops into a pan and add 1 litre of boiling water 4. Boil for 2 minutes, this will help to seal the meat 5. Remove the lamb chops, then discard the boiling water 6. Place the chops back in the pan 7. Add the cumin, pepper, chillies, spring onions, garlic, ginger, soy sauce & salt 8. Add 1 litre of cold water to the pan 9. Bring to the boil then cover the pan 10. Simmer for 1 hour on medium heat until the meat is tender 11. Remove chops from pan & drain 12. Heat 1 litre of oil in a wok till hot 13. Test temperature with chopsticks – if it bubbles then the oil has reached its ideal temperature 14. Place chops one at the time into the hot oil 15. Deep fry for 4 minutes until they are golden 16. Remove from oil and drain 17.
