Chinese Mu Xu Egg Recipe (Chinese Vegetable & Egg Stir Fry Recipe) Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes. Ingredients: 100g tree fungus (Jews Ear) after soaked 2 leeks 3 eggs 0.5cm ginger 3 cloves garlic ½ Tsp ground red pepper Method: 1. Soak the tree fungus in cold water (if using dried product) for 2 – 3 hours 2. Finely chop the ginger and garlic and thinly slice the leeks 3. Break the eggs into a bowl and beat until light 4. Heat 2 Tbsp oil in the wok, add the egg and stir-fry until scrambled, then remove 5. Heat another 2 Tbsp oil in the same wok 6. Add the ginger, garlic, ground red pepper and leeks and stir-fry for a minute 7. Add the tree fungus and stir-fry for 2 minutes 8. Add the eggs, salt to taste, and fry for further 2 minutes 9.
