Chinese Stuffed Tomato Meatballs (Chinese Style Cooking Recipe) Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes. Ingredients: 4 Tomatoes 1 Onion 6 Cloves Garlic 100g Mince Pork or Beef 1 Tsp Coarse Black Pepper 100g Cooked Rice 80g Grated Cheese Salt to Taste Method: 1. Cut the top off the tomatoes and spoon out the flesh. 2. Fine chop the cut off tomato tops and flesh. 3. Finely chop the onion and garlic. 4. Heat 2 Tbsp of olive oil, fry onion and garlic in a wok for 2 minutes. 5. Add mince and fry for 10 minutes. 6. Add the chopped tomato from stage 2 and fry for 5 – 8 minutes until the liquid has evaporated. 7. Add black pepper, salt and rice, fry for 3 minutes. 8. Place mince and rice mixture into each tomato from stage 1 then top with cheese. 9. Place into a preheated oven at 180 degrees for about 15 minutes. 10. Remove from oven and transfer onto a dish and serve.
