Sichuan Spicy Chicken Breasts (Chinese Szechuan Cooking Recipe) Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes. Sichuan Spicy Chicken Breasts Ingredients: 300g Chicken Breasts 3 – 6 Small Dried Chillies 4g Sichuan Peppercorns 20g Roasted Peanuts 1 Tsp Sesame Seeds 3 Cloves Garlic 30g Coriander 2 Spring Onions 1 Tsp Chicken Powder 1 Tbsp Light Soy Sauce 1 Tbsp Chilli Oil 1 Tsp Cornflour Salt to Taste Hot Plate Method: 1. Finely chop the garlic and spring onion 2. Roughly chop the chillies and coriander 3. Thinly slice the chicken and cut into thin threads 4. Place chicken in a mixing bowl, add a pinch of salt, half of the chicken powder, cornflour and 1 Tsp oil. Mix well and leave to marinate for 5 minutes 5. Roughly grind the peanuts 6. Heat the hot plate 7. Meanwhile, heat 2 Tbsp of oil in the wok 8. Add garlic, chillies and Sichuan peppercorns into the wok, fry till aromatic 9. Add chicken and stir-fry for 3 - 5 minutes until the chicken turns pale 10. Add chicken powder, light soy sauce and chilli oil. Stir-fry for a minute 11. Add a pinch of salt, sesame seeds and peanut. Stir-fry for 30 seconds 12. Add spring onion, coriander and stir 13.
